  Smashed Avocado and Feta on Toast
Ingredients:
1 Avocado
2 tablespoon lemon, juiced
1/4 tsp ground cumin
Pinch salt & pepper
2 slices bread, toasted
1/4 cup good Feta Cheese, crumbed
Sauteed Mushrooms
Some chopped parsley for garnish
 
Preparation:
Remove the pit from the avocado and scoop out the flesh into a small bowl. Mash it slightly with a fork. Add lemon juice, cumin, salt and pepper and mix.

Meanwhile, sauteed mushrooms in butter or olive oil and season with salt and pepper. Toast the bread.

To serve, serve the smashed avocado on toast, top with the crumbed feta, and mushrooms on the side.

Suggestions: Ripe Hass avocados are almost black and slightly soft when gently pressed. Look for "Mexico" in the sticker for the authentic flavor!
