Ingredients:

2 avocados from Mexico, 1 mashed & 1 finely diced
1/8 cup black beans
1/8 cup kernel corn
2 tablespoons cilantro leaves, finely chopped
1 jalapeño, seeded & diced
Juice of 1 lime
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon Cayenne pepper
1/2 cup chicken, cooked & diced
3 tablespoons hot sauce
1 cup organic spring mix

Preparation:

Cut avocados in half. Remove pit. Scoop avocado pulp out from the skin, put pulp in a mixing bow.
Mash one avocado & dice the other.
To mashed avocado add bean, corn, cilantro, jalapeño, lime, salt, pepper & cayenne. Mix well.
In a small bowl, toss chicken with hot sauce. Add to avocado mixture. Place spring mix into avocado cups.
Top with kickin’ chicken avocado mix.
