1/2 red onion, diced
2 tablespoons chopped cilantro
1 tablespoon pureed chipotle in adobo
2 tablespoons crumbled queso fresco, anejo or cotija
2 tablespoons lime juice

1/2 sweet onion, diced (such as Vidalia or chipolini)
3 tablespoons pomegranate seeds
