Tropi-Guac with Sugared Lime Tortillas

Tropi-Guac with Sugared Lime Tortillas

Ingredients:
1 cup shredded coconut
1-2 ripe avocados from Mexico, cubed
1 large banana, chopped
Juice of 1/2 lime + juice of 1 lime, reserved for tortillas
1 cup crushed pineapple, drained well
1/2 mango, cubed
1/4 cup Greek yogurt, plain
1 tablespoon honey
1 tablespoon fresh cilantro, chopped
10 flour tortillas
1/2 cup sugar
1 fresh coconut, for serving bowl (optional)

Preparation:

Preheat oven to 300 degrees
.
Place shredded coconut onto a baking sheet and toast in oven for 1-2 minutes or until the coconut begins to turn a golden color. Remove from oven and set aside.

In a medium sized mixing bowl, add avocados from Mexico and banana. Using the back of a fork, smash until combined.
Add lime juice and stir to incorporate.
Add mango and pineapple and stir to incorporate.
Fold in yogurt and honey.
Once everything is completely incorporated, carefully fold in cilantro and toasted coconut (reserve a bit of coconut). Top with a sprig or two of cilantro and a sprinkle of toasted coconut.

Refrigerate until ready to serve!

While the Tropi-Guac is chilling, make your Sugared Lime Tortillas:
Cut the tortillas into quarters. Brush each piece with lime juice and sprinkle liberally with sugar. Place onto baking sheet and toast for 3-4 minutes or just until the tortillas begin to turn a golden color. Do not let them turn dark!
Remove from oven and let cool on baking sheet.

Serve with Tropi-Guac!
